Thermomix sweet potato mac and cheese This recipe is originally from Nigella, so you know it’s going to be a good one right.  I saw it here the other day when I was reading the Daily Mail online (yes, I still read the British papers).  It looked too good not to try, especially as my family are HUGE mac and cheese fans.

I tweaked it a little and added bacon and it was seriously the BEST mac and cheese ever. This recipe is going to become a staple in my meal planning for sure.  I hope you enjoy it too.  sweet potato mac and cheese

An absolutely delicious alternative to the the traditional Mac and cheese. According to my family, it's even BETTER!

Ingredients
  • 650g sweet potato
  • 350g penne pasta
  • 75g feta
  • 125g mature cheddar
  • 6 slices bacon
  • 500g milk
  • 50g flour
  • 50g butter
  • 1 tsp paprika
  • salt and pepper to taste
Instructions
  1. Weigh out the penne and put it in a pot of boiling water on the stove. Cook as per packet instructions until cooked through, but still with a little bit of bite to it.
  2. Peel and roughly chop the sweet potato
  3. Add it to the TM bowl and chop on speed 7 for 10 seconds. Pour into the varoma basket.
  4. Fill TM bowl half way up with water. Attach the varoma to the top and steam the sweet potatoes for 18 minutes on varoma temperature, speed 4.
  5. While the pasta and potatoes are cooking, fry the bacon and set it aside to cool. Once cooled, chop it into bite sized chunks.
  6. Once the potatoes are ready, tip them into a large oven proof dish and roughly mash them with a fork.
  7. Turn the oven on to 180 degrees.
  8. Add the milk, flour, paprika and butter to the TM bowl and cook for 7 minutes at 90 degrees, speed 4.
  9. Sprinkle the bacon, feta and hot cooked pasta over the sweet potato and give it a good mix.
  10. Add ¾ grated cheese and mix again.
  11. Pour the white sauce over the dish and give it a good mix through.
  12. Sprinkle the remainder of the cheese and a sprinkle of paprika to the top and put it in the oven for approx. 10-15 minutes or until the top is a golden brown colour.
  13. Serve on it's own or with a fresh salad.
  14. Enjoy X

  1. I love everything Nigella and this is no exception. Hubby still reads all the English papers online. My friend went to see Nigella at the Blog Chicks breakfast and it looked so good. I was pea green with envy. Our favourite week day dinner is homemade spicy tacos. Noms!

    • Yes I saw that online – I was pea green too. Would LOVE to meet her. I’ve never made tacos before, you might have to share that recipe Sam xx

    • Easy to ditch the bacon. You could swap it for some grated zucchini or sweetcorn, or just leave it out completely xx

  2. YES!! Huge success with this recipe both with my 19 months old son and my husband who said (I quote): “Whatever you’ve done with this, do it again!”

    Just one question though, with the sweet potato, once I put it in the bowl 10 sec at speed 7, it basically shreds it so when I saw step 6 “roughly mash them with a fork.” I got a bit confused as mine were already kind of mashed from Step 3.. It all worked out great though 🙂

    • I’m am also confused by step 3. Should speed 7 for 10 secs be the cheese? Also, is it possible to steam the sweet potato in Varoma while cooking pasta in the thermomix bowl?

      • Also confused by this same step! I just did step 3 it puréed the sweet potato! And there’s no mention of grating / milling the cheese so I think your assumption is right. I hope I can rescue my dinner!
