Lemon Bars recipe While I was in South Africa the lovely Lauren from Create Bake Make offered to guest post for me with this delicious thermomix lemon bar recipe.  I had all the best intentions to blog throughout my trip, as well as add some guest posts but the internet in South Africa was having none of it!!

Trying to get online was a complete nightmare.  I either had no internet at all or the connection was so slow it was impossible to do any more than update my Facebook status.

Now that I’m back, I couldn’t let this fabulous recipe go to waste, so without further ado – here it is.

Ingredients
  • For the base:
  • 1 cup of self raising flour
  • ½ cup of caster sugar
  • 60g of butter
  • 1 egg
  • For the filling:
  • ¼ cup of lemon juice
  • ½ cup of caster sugar
  • 1 egg
  • 60g of butter
  • icing sugar to decorate
Instructions
  1. Preheat your oven to 180 degrees (fan forced) and line a slice tin with baking paper. Make sure to leave around 2cm of baking paper hanging over the sides, to allow easy removal of the slice from the tin.
  2. Place the flour, sugar and butter into your Thermomix Bowl and mix for 10 seconds on speed 9 or until the mixture resembles breadcrumbs.
  3. Add the egg and mix for 15 seconds on speed 5 or until a dough has formed.
  4. Place approximately ⅔ of the dough (enough to cover the base) into the tin and gently flatten the surface. Set the tin aside and make the lemon filling.
  5. Insert your butterfly and place all of the ingredients for the filling into a clean Thermomix bowl before cooking for 12 minutes, 55 degrees, speed 3.
  6. Pour the hot lemon filling over the dough and then crumb the remaining dough
  7. over the top.
  8. Place slice into your oven and cook for 25 minutes or until the top turns a lovely golden
  9. brown.
  10. Allow slice to cool in the tin before carefully removing - using the overhanging
  11. baking paper to remove.
  12. Dust with a little icing sugar and serve

  1. I love South Africa (where did you spend your time), Capetown was my favourite…I also love Lemon Slice, you have just given me another reason to buy a Thermie, this recipe is so easy….
