The BEST thermomix butter chicken Last night I made butter chicken for dinner and although I’ve made a heap of times before, Hollie told me it was the best dinner in the whole world!!!!  That was a major fist pump moment for me as she’s not been the easiest kid to feed.

Of course if Hollie says it’s good then it really must be.  You’re going to have to take my word for it and try it out.  The best thing about this recipe I think, is that it is just so quick and easy to make.  It is literally takes half and hour from start to finish, making it perfect for busy week nights.   The BEST thermomix butter chicken

Everybody loves butter chicken! This recipe is so quick and easy it makes the perfect mid-week meal for any busy family.

Ingredients
  • 25g butter
  • 1 onion
  • 2 cloves garlic
  • 400g chicken (cubed)
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ½ tsp tumeric
  • ½ tsp cumin
  • good pinch of salt
  • 1 tsp chilli flakes (this will make the curry mild. Add more if you prefer more heat)
  • 1 tsp korma or garam masala paste
  • 100g tomato paste
  • 1 400g tin coconut cream
  • 1 400g tin chickpeas
  • chopped parsley and desiccated coconut for garnish.
  • For the rice:
  • 400g basmati rice
  • 1 400g tin coconut milk
  • 500g water
  • pinch of salt
Instructions
  1. Chop the onion and garlic for 5 seconds on speed 6.
  2. Add the butter and saute for 2 mins, 100 degrees speed soft.
  3. Add the chicken and all the spices and mix together on REVERSE speed 2 for 5 seconds.
  4. Cook on 100 degrees for 5 mins on REVERSE speed soft.
  5. Add the tomato paste, coconut cream and chickpeas and gently cook for a further 5 mins at 90 degrees on REVERSE speed 1.
  6. Pour into a serving bowl and keep covered while you cook the rice.
  7. RICE
  8. Put the steaming basket into the thermomix and weight out the rice.
  9. Rinse it under cold water until the water runs clear.
  10. Add 500g water and the coconut milk to the thermomix and put the basket with the rice back in.
  11. Cook for 14 mins on varoma temperature, speed 4.
  12. Serve hot with your butter chicken and enjoy.

 

So I now have two out of three kids who will eat (if not try) most things I cook these days.  I am still working on the toddler though, who has who own opinions about what she will and will not eat (most things still fall in the ‘will not category’)!

  2. I love butter chicken, yes I also have a fussy eater, she was a great eater until she turned 6 I thought it was supposed to go the other way! Luckily the other one will at least give anything a try. I’m going to give this a go as I think it’s something that we will all like (fingers crossed!).

    • Oooh I hope she likes it. Fussy eaters can be soo painful. Mine older two are only just starting to get better 🙂

  3. I would eat curry every day if my husband didn’t have such discerning tastebuds! He’s a very fussy eater but he’d love this – Thermomix curries are the best, and I think the addition of the chickpeas is just genius!

  5. Hi, I made it and it was good, although more sweet that I would prefer, it may be the fact that coconut cream in Mexico is overly sweet due to is mainly used in “piñacolada”. Could I mix it with half coconut water half cream? but it would loss thickness and original is not “restaurant-thick”. Any advice?

  7. Wow, made this for dinner tonight. Everyone loved it. My 11 year old actually licked his bowl clean and my super fussy 7 year old even ate it and said it was yummy. I doubled the chicken (instead of the chickpeas) and doubled the spices. Great recipe, thank you.

    • Im abit bummed about this.. i cooked this tonight.
      I found it very milky like a faint milky tomato soup, uv then added dble the spices an still dont find it strong. I dont like the chucky chic peas i tought thwy would fade into the sauce.
      My chicken basically turned to mostly ahredded chicken.
      And then my 14 minute fooked rice waa no where near cooked 😩…

  15. It was 550pm and i was panicking as i hadnt started dinner tonight and i came across this. I actually made most of it in a wok on the stove after the cooking of the onion part. Omg soooo easy and very tasty, everyone liked it. I used ghee instead of butter, doubled the spices, used 700g chicken for five people, and topped with parsley and tabasco. I loved that the chickpeas make it healthier and it is such a doddle. Oh i also used a can of tomatoes as i had run out of tomato paste. Thank you, this will be part of my go to repertoire now.

  16. Was very excited to try this (so quick!) but was super disappointed with the result. My chicken was quite broken up and the sauce was really just coconut. I added bigger quantities of the spices but still found this bland. Unfortunately I will not be making this again.

  21. I made this last night. I didn’t have coconut cream so used ordinary cream mixed in coconut milk and did a plain rice instead. Loved it will be making again but will have coconut cream next time.

  24. I have been making this recipe for years and it is by far one of our family favourites on regular rotation! I do adapt recipe slightly in that I use frozen peas instead of chickpeas (kids aren’t fans of them unless it’s to make hummus!) and I also add just one 270ml tin of coconut cream otherwise it is a little runny with 400ml. I also increase spices slightly. Have successfully made double batches of this – just need to adjust cooking time accordingly. Have never ended up with shredded chicken either (use reverse peeps as the recipe says). Highly recommend giving this a try – you won’t be disappointed 😀

  26. I’ve made this a handful of times now and it’s just lovely. Easy to make and easy to eat:) I usually have to add a few more minutes to the rice cooking but otherwise, kept to the recipe. I always serve with some buttery naan. Yum Yum. Thank you!

  27. I was excited to make this after reading all the 5 star reviews but I was left extremely disappointed. It was so bland. Even after going back and doubling the spices there was still virtually no flavour. It baffles me that people can say how tasty and delicious this is. I will say I thought it was a really genius idea to add the chickpeas but besides that, this recipe is a big fail in my eyes

  28. I’m going to try this recipe and add some sneaky veg. I would also probably cook off the spices, probably at least double the qty with the onion and garlic to enhance the flavour. Also will add a tin of tomatoes and double the chicken. Depending on flavour could add yoghurt instead of so much cream. Always salt and pepper to taste. Will post back once over made it

    Added fresh beans from the garden and fresh tomatoes . Using less chicken lets hope it tastes okay .

  30. I ended tripling recipe – which of course didn’t fit in my Thermomix. I was generous with the spices, but gentle on the chilli. The only thing I didn’t triple was obviously the chilli and the coconut cream and the beans. So just the one tin of cream and the one tin of beans. The consistency was great, not runny and the flavour was fabulous. A definite staple recipe. Thankyou

  31. This recipe is great. I’ve made it several times and the whole family loves it. Spicy enough for the husband and not too spicy for the kids. I add frozen peas (directly into the Thermomix) in the last 5 mins of cooking, so that I get a few veggies into the kids too. It’s one of my favourite, go-to Thermomix recipes, so thank you for sharing.
