My girls LOVE baking, but I have to admit that sometimes I just can’t deal with the mess!!  I find sprinkles for days afterwards in the weirdest of places – they seem to just get EVERYWHERE!!!

Also when I say they love baking, really all they want to do is the decorating.  Miss H loses interest in the mixing part pretty quickly and often states “Mum, just call me when it’s time for the fun bit!”.

This chocolate cupcake recipe is a total WINNER for kids and is guaranteed to get you a whole bunch of smiles and happy kids for at least 45 mins (which is a LOT of peace and quiet believe me!). They take just a couple of minutes to mix up and only 15 minutes to bake.  Too easy!

I often whip them up just before school pick up, so when they come home from school they’re all ready for the ‘fun bit’ – and it sorts out afternoon tea too.   Too easy chocolate cake in the thermomix

The easiest and yummiest cupcake recipe ever. Perfect for little bakers who just want to get straight to the fun bit and decorate.

Ingredients
  • Cupcakes
  • 110g butter
  • 75g raw sugar
  • 120g plain flour
  • 1 tsp baking powder
  • 80g cocoa powder
  • 2 eggs
  • 110g milk
  • Buttercream icing
  • 150g butter
  • 300g raw sugar
  • 80g cocoa powder
  • 2.5 tbs milk
  • smarties or sprinkles for decorating
Instructions
  1. Preheat the oven to 180 degrees
  2. Line a cupcake tray with paper cups (or silicone if you have them)
  3. Grind the raw sugar for 5 seconds on speed 10. Scrape down the sides and repeat for a further 3 seconds to give you caster sugar.
  4. Add everything else and mix on speed 4 for 30 seconds and then turn it up to speed 6 for 1.5 minutes.
  5. Spoon into the cupcake cups until they are about ¾ full.
  6. Bake for 15 minutes.
  7. Allow to cool before icing.
  8. Buttercream icing
  9. Grind the sugar for 30 seconds. Scrape down the sides and repeat until you have icing sugar.
  10. Add the milk, butter and cocoa powder and mix on speed 8 for 30 seconds until it is all combined and smooth.
  11. Spread on each cupcake and have fun decorating them.
  12. Enjoy x

  2. Went to make these tonight and realised the recipe may need milk! SO I added about 110 grams of milk 🙂 Nice and easy!

  4. Hi. I made your cakes in the thermomix and they came turned out rock hard and dark brown.
    What did I do wrong? New thermie lover.

    • Oh no, sorry to hear that Elisa. I’m not really sure what happened. I make this recipe so often and they always turn out ok. Maybe try mixing the ingredients with the butterfly in as it could create more air?? Also if you oven is a different temperature (all ovens are different) maybe bake it for a little less time?? I hope you give them another go. I going to make them again this week with my girls, just to double check and I’ll let you know :))

  6. I also found these very dense and bitter – I wonder if there is an error with the amount of cocoa? It was a lot of cocoa and the mixture was very thick.

  7. Blah don’t make these, there is something wrong with the recipe, they are really bitter! I just had to throw out 24 cupcakes!!

  8. There is a problem with this recipe. Way to much coca powder, the mixture is almost black and very bitter. I doubled the recipe to try and level out the coca and they were still bitter. Hopefully the recipe gets tweaked so this doesn’t happen to anyone else. I should have read the comments.
