Sugar free Anzac biscuits
Recipe type: Thermomix
  • 250g butter
  • 100g rice malt syrup
  • 1.5 tsp bicarbonate soda
  • 3 tbs boiling water
  • ⅔ cup stevia
  • 120g desiccated coconut 180g oats 300g plain flour
  1. Pre-heat the oven to 180 degrees and line two baking trays with greece proof paper.
  2. Add the butter and rice malt syrup to the thermomix and set it to 90 degrees for 3.5 minutes on speed 2.
  3. Mix the bicarbonate of soda into the boiling water (in a separate cup) until it fizzes and dissolves and add it to thermomix. Mix for 10 seconds on speed 2.
  4. Add the dry ingredients and mix for 1 minute on speed 3-4 until it forms a dough.
  5. Roll (squeeze) into balls and flatten each one with a fork.
  6. Bake for approx 8 minutes until they turn a golden brown colour. Allow them to cool and harden before enjoying them with a lovely cup of tea.
