Easy peasy YO-YO biscuits

Quick, easy and delicious. Get creative and add lots of different yummy flavoured fillings :)
Ingredients
  • For the biscuits:
  • 250g butter
  • 80g icing sugar
  • 1 tsp vanilla extract
  • 75g corn flour
  • 225g plain flour
  • For the icing:
  • 100g butter
  • 300g icing sugar
  • 2tbs passionfruit pulp = passionfruit icing or
  • 2 tbs cocoa = chocolate icing or
  • 2 tbs lemon juice = lemon icing or
  • 1 tbs vanilla extract = vanilla icing or
  • 2 drops of your choice of food colour = colour icing
Instructions
  1. For the biscuits:
  2. Pre-heat the oven to 180 degrees C.
  3. Add the butter, icing sugar and vanilla to the TM bowl and mix on speed 6 for 15 seconds until it is smooth and creamy.
  4. Add both the flours. Set the thermomix to the closed lid position and set the dial to knead for 1 minutes.
  5. Roll the dough into small balls (about 1 tsp amount). Make sure they are a couple of cm's apart because the biscuits will spread.
  6. Using a fork, press each ball down to flatten it. Dip the fork into water to prevent sticking.
  7. Bake for approx 15 minutes or until the biscuits are a golden brown colour just around the edges.
  8. Allow to cool before icing.
  9. To make the icing:
  10. Add all the ingredients to the TM bowl and mix on speed 6 for 30 seconds. Scrape down the sides and repeat. You may need to add a couple of tbs of hot water to it to get the right consistency.
  11. Once the biscuits are cooled. Ice them together and enjoy.
Notes
These biscuits will last up to 5 days if kept in a sealed container.
