The MOST delicious carrot and apple loaf cake made in the thermomix

An absolutely delicious, soft bake that is totally irresistible. It can be made as a loaf cake or as yummy little lunch box muffins.
  • 300g carrots (peeled and roughly chopped)
  • 2 small apples or 3 large apples (peeled and quartered)
  • 140g butter
  • 120g sugar
  • 3 eggs
  • 2 tsp baking powder
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 180g plain flour
  • 60g icing sugar
  • 1 250g block cream cheese
  • Orange zest
  1. Preheat the oven to 150 degrees.
  2. Add the carrots and apple to the thermomix and chop for 5 seconds on speed 6. Scrape down the sides and repeat for another 2-3 seconds if necessary.
  3. Transfer to a separate bowl.
  4. Add the butter and sugar and beat for 15-20 seconds on speed 4. Scrape down the sides and repeat 2 or 3 times until the mixture is light and fluffy.
  5. Add the eggs and beat for 30 seconds on speed 5-6.
  6. Insert the butterfly.
  7. Add the cinnamon, nutmeg, baking powder and flour and fold together for 10 seconds on speed 2.
  8. Next add the apple and carrot, but before you do use your hands to squeeze out all the excess liquid. If you don't do this your cake will turn out very dense and soggy.
  9. Fold it into the mixture for a further 10 seconds on speed 2.
  10. Tip the mixture in a lined loaf tin and bake for 45 minutes or until well risen and golden brown on top.
  11. Allow to cool completely before icing.
  12. ICING
  13. Add a few bits of orange to the thermomix bowl and whizz on speed 8-9 for 1 minutes. Transfer half to a separate bowl to use for decorating.
  14. Add the cream cheese and icing sugar to the bowl and mix for 20 seconds on speed 4.
  15. Spread over your (cooled) and ENJOY!
